FREE SPIRIT EL DIABLO

- 1 inch serrano chili, about ½ chili 
- 1 Tbsp. fresh ginger 
- 1 Tbsp. black current jam 
- 1 oz. lime juice 
- 2 tsp. caramel sauce 
- 3 drops vanilla 
- pinch cinnamon 
- large ice cube 
- 3-4 oz. soda water 
- 1 rosemary spring 
DIRECTIONS
- Roughly chop serrano & ginger, add to shaker glass & muddle until macerated. 
- Add jam, lime juice, caramel sauce, vanilla & cinnamon. Stir with mudding stick until incorporated. 
- Strain mixture though a fine mesh sieve into a measuring cup or other vessel, pushing down on ingredients to extract all liquid. 
- Pour liquid into serving glass & add large ice cube. 
- Pour soda water over the top of the cube to create a float of current colored syrup on the bottom of the glass. 
Garnish: Take the rosemary spring, slap between your hands then drop on top of the drink. Serve with a swizzle stick.
